Executive chef, Albert De Angelis and chef de cuisine, Arren Caccamo successfully blend the new with the old in a variety of dishes which include orechiette pasta with grilled eggplant served in a tomato basil sauce with fresh mozzarella, grilled Hawaiian mahi mahi with mango-pineapple salsa and ginger sesame spinach, as well as seared sea scallops with Asian pear-micro green salad in a citrus-cilantro vinaigrette.
