Drink of Choice…I’m a craft beer junkie.  
Favorite Cuisine…I love Japanese food. I’m a fan of the cleanliness and the art form to it.
If Not a Chef, I’d Be…a professional football player. I’m only five-foot-eight, but I grew up playing all sports and it’s every kid’s dream to be a pro athlete.
Favorite Kitchen Utensil…a Japanese steel knife. It never gets dull.
Last Book Read…The last book of the Twilight series. I want to know what’s going on before the next movie comes out.
Favorite Place to Dine Out…Harper’s Bar & Restaurant and The Cookery, both in Dobbs Ferry.   
I Hate It When a Diner at My Restaurant...judges us by the small size of our restaurant. If the food is good, it doesn’t matter how many seats we have.
Favorite TV Show…True Blood. I am probably a vampire at heart.
The Toughest or Craziest Part of My Job Is...dealing with the mega multi-personalities that walk in and out of the door every day and that work for you. It’s like having hundreds of kids and having to accommodate all of them.
Favorite Form of Exercise…Regular CrossFit, which is a mixture of cardio, weights, etcetera.
Shoes I Wear in the Kitchen…Sneakers.
My Eating Disorder Is…I’m too healthy at times. We juice a lot here and there’s always fresh produce around. Most people probably wouldn’t want to eat the food that we eat in the back.
Nutritionists Are…great. They eat healthy. I wish I knew more.
The Most I’ve Paid for a Meal…Three hundred dollars a man at Per Se.
Favorite Late-Night Snack…Pretzels when watching True Blood.
Most Famous Person I Cooked for…Troy Aikman, the former quarterback of the Dallas Cowboys. I’ve also done a private dinner for Alex Rodriguez when he played for the Texas Rangers.
