I Never Eat…sweetbreads. I hate the texture.

I Never Cook with…tofu!

I Hate It When I’m Dining at a Restaurant and…the dinner plates are wet and silverware unclean; I usually walk out.

The Toughest Part of My Job Is...trying to find a clean and spotless white chef coat in my closet every morning.

The Strangest Request from a Diner…Guests have asked us not to include pork because they don’t eat it. However, they serve themselves bacon from the salad station. I suppose they don’t know bacon is pork!

The Most I’d Pay for a Meal…I usually spend much more to get to the restaurant than for the food! I could consider traveling to Madrid to Museo del Jamón. Sandwiches with serrano jamón or manchego cheese, croissants with chorizo, wine by the glass, and beer—all one euro each.

When Chefs Get Together, They…talk about their favorite places, which are never fancy.

Most Famous Person I Ever Cooked for…Pelé, the great Brazilian soccer player; he had churrasco and finished with the papaya cream.

What Surprised Me Most About Cooking in a Westchester Restaurant Is…how many people had previously dined with us in our restaurant in Aruba.

The Person I Would Most Want as a Companion During a Long Car Trip Is…After many considerations, I would pick my wife—cheesy, but true.
