Dish I Do the Best…I am a Cape Codder at heart. I do a butter-poached lobster salad with a grilled-scallion aioli and some grilled lemon.
Drink of Choice…A green juice cleanse. I have one every morning and love it—spinach, pineapple, apples, lemon, and kale.
Culinary Hero…People may laugh, but I got hooked on cooking from watching Emeril Lagasse. I also look up to chefs like Thomas Keller and André Soltner, and I can’t not mention my Aunt Francesca, a classically trained chef who has always been my sounding board.
Favorite Kitchen Utensil…Roxanne! That’s my knife. We go everywhere together.
Last Book Read…A Confederacy of Dunces by John Kennedy Toole. I’ve read it a dozen times—really funny.
Favorite Place to Dine Out…I don’t get out much, but, when I do, I am a big fan of Juniper in Hastings—Chef Alex’s food is awesome.
I Never Cook with…iodized salt. It makes everything taste like chemicals.
Show I’d Like to Be on…Top Chef. I would win.
Favorite Late-Night Snack…Street food. I can’t turn down a good gyro.
When I Meet People at a Party and I Tell Them I’m a Chef They Always...tell me what they cooked last week and ask if I want the recipe.
My Favorite Cookbook…The Flavor Bible. There are no recipes, just food combinations that work well together.
Food Trend I Hate the Most…the processed “American diet” food.
My Favorite Music Group Is…Pearl Jam.
