Think farm-fresh eggs, house-smoked salmon, and Hudson Valley yogurt served with seasonal berries. If you happen to visit when the Castle’s low on overnight guests (generally Tuesday through Thursday), you’ll have to order off the à la carte menu, but don’t worry—the ricotta griddle cakes with blackberries, Meyer lemon, and maple syrup won’t leave you feeling like you missed anything. $25

Härth Restaurant, Rye Brook
You don’t have to stay at the Hilton to reap the benefits of its breakfast bar ($19.75). Although the buffet is filled to the brim with seasonal fruits, cereals, and pastries, you won’t want to miss the station where eggs are cooked to order—whether you like them over easy or in an omelet. Prefer just a coffee and a muffin? For three dollars less, you can hit this bar continental-style.
