Made from a proprietary blend of X2O’s aged cowboy rib-eye trimmings, Hudson valley foie gras and other hidden gems, you won’t find this on the menu. But ask, and it will come.

X2O’s Cowboy Goes to France Burger
Top secret and on the QT: You won’t find this burger on X2O Xaviars on the Hudson’s menu, but, if you know to ask for it, this burger will appear. Chef Peter Kelly grinds his own beef from the trimmings of X2O’s signature aged cowboy rib-eye steak, then blends it with prime chuck, cubed Hudson Valley foie gras and—here’s the secret—puréed chicken livers. Griddled and served on a toasted, house-made pretzel bun with two laser-focused sauces (see page 69, “Anatomy of a Burger”), X2O’s Cowboy Burger is a stone killer. It won by a landslide at last summer’s Westchester Magazine Burgers, BBQ & Beer Bash.
