Coffee with Chef Shiraz Mia

Rani Mahal
327 Mamaroneck Ave, Mamaroneck (914-835-9066)

Dish I Do the Best…Chicken tikka masala. It’s my favorite and my specialty.
Drink of Choice…Taj Mahal. The beer pairs very well with Indian food.
Favorite Guilty Pleasure Food…Deep-fried food. My doctor almost had a heart attack last time hearing about my KFC indulgences.
Favorite Cuisine…I love Italian food.
Culinary Hero…We didn’t have those in our times.
Chefs Tend to Use Too Much...Oil.
Favorite Kitchen Utensil…Trusty old spatula, Kitchen Aid brand
Last Book Read…That must’ve been like college, some twenty years ago.
I Never Eat...Beef. I’m more of a goat person.
Favorite Place to Dine Out…Enzo’s Ristorante down the street from us
I Hate It When a Diner at My Restaurant Asks...“Can you make the chicken korma spicy?” The korma is a very mild sauce, and attempting to make an entrée that’s based on peanuts and cashew spicy just doesn’t work.
What Diners Don’t Know but Should…The natural Indian spices and herbs are very good for the human body.
Favorite Late-Night Snack…Corn Pops. I love them.
Favorite Pain Reliever…Advil works great. Tylenol has lost its touch.
Culinary School Can’t Teach You…How to cook ten dishes at once, with one hundred customers yelling for food.
My Favorite Cookbook...Modern Cookery by Thangam E. Philip
