At CuisineArts Cooking School (547 Rushmore Ave, Mamaroneck 914-698-7250), Renée Cohen, whose culinary credits include a Master Culinary Degree from the French Culinary Institute and a stint as pastry chef and manager at Rose Café in Manhattan, teaches up to 10 students in her home kitchen how to prepare 12 to 14 dishes. Class themes vary but this month it’s Everyday Healthy Dishes (April 7), Middle Eastern Cuisine (April 15), Greenmarket to Grill (April 20), and Flavors of Italy (April 29). Each includes lessons on ingredient selection, knife skills, and preparation methods. A three-hour class costs $95.
