Sure, apple cider doughnuts are the sweet staple of the season, but Matt Moore of White Plains-based MAD Donuts has us switching over to these oversized apple fritters. Known for his fluffy and tasty doughnuts, Moore starts with doughnut dough; then uses fresh Granny Smith apples, cinnamon, sugar, and apple cider to create an apple filling; and glazes the pastry with vanilla bean and cinnamon glaze for a sweet finish.

Known for its gluten-free scones and brownies, Red Barn serves up several apple-centric sweets, like traditional apple and apple salted-caramel crumb pies. For a personal-sized treat, the apple pie roll-up is a favorite. Made from scratch, hunks of organic Fuji and Gala apples are jam-packed into a flaky pastry made from organic cage-free eggs and grass-fed butter.

In the new Appely Ever After margarita, apple cider is mixed with tequila, triple sec, and lime juice to create a seasonal libation. Apple Cider Caramels at La Petite Occasion

Made from Hudson Valley-sourced ingredients, Michele Kim’s small-batch caramels and toffees are a county favorite. For her seasonal apple cider caramels, Kim sources local cream and milk from Hudson Valley Fresh in Poughkeepsie, butter from Kriemhild Dairy in Hamilton, and apple cider from North Salem’s Harvest Moon Farm & Orchard, and adds warm spices, including cinnamon, star anise, and peppercorns.
