After testing the waters at the Port Chester train station, Aqui Es Sante Fe will offer homemade breakfast arepas from 6 a.m. until 10 a.m.

Arepas are made from ground maize dough or cooked flour, either eaten with accompaniments or split to make sandwiches. They are considered to be an iconic food in Colombia.

The restaurant offers four breakfast arepas, including the traditional fillings of solely scrambled eggs or scrambled eggs with tomato and scallion. There’s also a bacon, egg, and cheese version made with mozzarella, and one called The Chicken, The Pig and The Cow, featuring homemade chorizo, eggs, and fresh Colombian white cheese, or queso fresco.

Carlos Santos, the new owner Aqui Es Santa Fe for about a year and a half now, says that there was no place open in Port Chester well before 9 a.m. that felt like a coffee shop. “Some people have been here every day since we opened early, so that’s a good sign,” he says.

Aqui Es Santa Fe just completed the renovation of its new space to serve as a café and sangria bar.

The restaurant recently bought and renovated the space next door to add more room to be used during breakfast and for a new sangria bar. Other breakfast options available include empanadas, blended juices, and Colombian coffee, featuring Carlos’ Signature: shaken iced coffee with an espresso shot and cold frothed milk.
