Sorry grain bowls, we know you’re trending and all, but you can’t hold a candle to the world’s most perfect food: cheeseburgers. Quinoa just doesn’t stand a chance against the awesomeness of juicy patties, gooey cheese, squishy buns, and all those toppings (seriously, what isn’t made better with bacon?). But as delicious as burgers are, they’re kind of everywhere from wood-paneled pubs in business for half a century to fine-dining, farm-to-table restaurants. So how to keep things interesting?
For Sleepy Hollow’s Bridge View Tavern the answer was to add game – wild boar, North American elk, and bison – to their menu of classic beef burgers. “We were looking to take our burger offerings to another level,” says owner Chris Maceyak, who felt burgers were an approachable way to let diners experiment with different types of meat.
On the menu: a free-range bison burger cloaked in cheddar and salsa barracha; a sweet-and-spicy wild boar chorizo burger with pepper jack, bacon jam, and caramelized onions; and a thick elk patty topped with mild muenster cheese and a couple big onion rings. Not in a burger mood? Try the please-drink-a-beer-with-me Disco is Dead fries, topped with wild boar chorizo chili, bacon, housemade cheese sauce, and slices of pickled jalapenos.
And while they’re not quite grain-bowl-level healthy, these game burgers do have a leg up on their beefy counterparts: the meat is “certified organic, antibiotic-free, hormone-free, and humanely raised,” according to Maceyak. “They are leaner and healthier than your typical burger.” That means you can be guilt-free about pairing your burger with beer.
