Custom Organic Meat Boxes Make Backyard Barbecues Easy

The Outpost's meat boxes will make a backyard grill-master out of you in no time with custom grill cuts.

Attention backyard grill-masters, there’s a novel way to stock up on top-notch meat for the summer. The Outpost in Bedford, a grocery store and restaurant dedicated to clean eating and featuring only organic, non-GMO products, offers a custom meat box composed of beef and pork cuts from animals raised on its farm in Cambridge, New York.

Store and farm owner John Ubaldo, a longtime resident of Pound Ridge who left a successful career on Wall Street to lead a charge against a toxic food system, even grows and grinds the grain feed for the pasture-raised animals. “I want to show people how you can enjoy real food, so you never go back to the other stuff,” he says.

Cuts can include ground beef, marrow bones, porterhouse, T-bone and sirloin steaks, hot dogs, country and spare pork ribs, center-cut chops, bone-in roasts and various kinds of bacon and sausage. Prices run from $10/lb for ground beef to $18 for center-cut chops to $28/lb for porterhouse.

Orders are taken over the phone or in store, where customers pick up their boxes. There’s no minimum or order frequency provision.

The beauty of the idea behind the custom box is that it contains only cuts and amounts a customer desires, unlike the premise of a CSA, which requires recipients to accept each week’s share regardless of preference. Ubaldo takes care to ask how customers plan to cook the meat or what they plan to use it for so he can offer suggestions. “I really try to cater to what each family wants,” he emphasizes. “If a family has three kids they’re not going to want to deal with a lot of big steaks, they might want smaller strip steaks or rib eyes. I just did a box for a hockey team of adults – they like sausages and steaks.” Fresh pork is also available in the store each week, but Ubaldo likes to include it in boxes because, as he says, “you always want to have a good stash in case someone shows up.”
